Safari Sertanejo ( backcountry) takes place in the State of Paraíba, in the northeast region of Brazil. The tour starts in the capital João Pessoa but this expedition will take them to the interior of the country, in the Caatinga region. This is a 5 day trip with accommodation in rural inns. The farm’s economy is related to goat and sheep producers, in addition to sugar cane for the Cachaça distilleries. In addition to the beautiful landscapes of the “Sertão”, the main attraction is the local culture
and history, which reflect the gastronomic heritage. This is a poor region in terms of economy, but admirably rich in folk and religious manifestations. People from the northeastern interior adapted their lives to the very dry climate and developed culinary techniques to make the best use of the ingredients. Local ingredients that are studied in this Food Safari: goat cheese, goat meat, free-range chicken, cachaça, fruit jams.

Program 05 days/ 04 nights

 

Day 01 – João Pessoa / Cabaceiras
Arrival in João Pessoa (JPA), capital of the state of Paraíba. The host / chef will be waiting for the trip to the city of Cabaceiras – 03h on an asphalt road. Check-in at the hotel and practical cooking class: how to prepare Bode no Buraco. Cocktail in the hotel courtyard, dinner and overnight.

Day 02- Cabaceiras
Departure after breakfast to Fazenda Carnaúba, in the city of Taperoá, to see the production of goat cheese, known for the prizes received and for being from the family of the world famous Brazilian writer Ariano Suassuana. Lunch on the farm using local cheese. After lunch, departure to Lajedo de Pai Mateus. Walk along the Caatinga trails to get to know the native fruits and plants that are used by the local people of the local cuisine. Sunset at Lajedo, return to the hotel, dinner and overnight.

Day 03 – Cabeceiras/ Areia
Check-out and departure to the city of Campina Grande. Full day of activities at Casa de Cumpade with workshops to learn how to prepare regional dishes: bottle butter, sun-dried meat, Buchada de Bode, stew preparation techniques, Chicken, Water Farofa and Pirão de Galinha. Transfer to the city of Areia to check in at the hotel. Dinner and overnight.

Day 04 – Areia
Departure after breakfast to visit the center of Areia, to learn about regional History and Cultural Heritage. Stop for lunch and visit the Engenho da Cachaça Triunfo and Casa do Doce.
Return to the hotel, dinner and overnight.

Day 05 – Areia / João Pessoa
Check-out and departure after breakfast to João Pessoa airport.
